easy french bread subs
deliciously simple, full of flavor and on point. savory crispy bacon, lettuce and fried green tomato subs, or even crispy golden shrimp subs with bacon. a simple savory sandwich makes the perfect snack, especially filled with golden crispy goodness in every bite!
subs, in my family, have historically been a lazy snack created with a touch of creativity. my father once shared with me that when he was younger, he had no desire to cook (and probably didn’t know how..) but fell in love with subs. Philly cheesesteaks, pastrami sandwiches and po’boys were his thing.
fried green tomato’s substituting red tomatoes in a BLT sub, is pretty much irresistible. the seasonings from the golden crispy crust blending with the savory taste of bacon has the power to make you question why you ever settled for a basic BLT in the first place.
crispy golden shrimp battered and fried and stacked in between two soft pieces of french bread served with all the toppings that make a sandwich great (lettuce, tomatoes, pickles, banana peppers.. you catch my drift?) and to top it off …parmesan truffle buttered potato wedges, and a cold drink.

1 loaf of french bread
1 green tomato, cut into slices
½ pound of shrimp, deveined
4 strips of bacon
2 tablespoons of cajun seasoning
1 teaspoon of salt
1 teaspoon of pepper
pinch of paprika
1 cup of corn meal
1 cup of flour
preheat oven to 450° and place bacon in oven for 20 - 25 minutes.
in a medium sized zip-lock bag, or any plastic bag mix together 1 cup of corn meal, 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of pepper and 2 tablespoons of cajun seasoning. shake well to evenly distribute dry ingredients.
lightly season your deveined shrimp with paprika, salt and pepper and set aside.
on a plate, cut slices of green tomatoes and lightly season with salt and pepper. whisk one egg into a bowl and set aside.
in a deep, wide mouth pot add peanut oil bring to medium-high heat.
prepare your subs by cutting the french bread into smaller 4-6 inch pieces and layer them with your preferred toppings. These may include mayonnaise, mustard, pickles, lettuce, banana peppers, etc.
starting with your green tomatoes, dip both sides into egg and coat with flour/corn meal mixture in ziplock bag. making sure each piece is well coated, fry until coating is golden brown and crispy. place on a napkin to absorb the remainder of the peanut oil.
once you have finished frying your green tomatoes, repeat this step with the shrimp and place shrimp on a napkin to absorb the remainder of the peanut oil.
layer your subs in any way you choose!! My favorite was mayonnaise, lettuce, fried green tomatoes, bacon, and shrimp. enjoy!
